Recipe of Indian snack Chivda


This is a Maharashtrian popular snack in India; will remain fresh for more than 20 – 30 days. In the market various types of Pohas available here we are using thin Poha in our recipe.

• Preparation Time: 30 Minutes.
• Serves:  4 persons.

Ingredients:
• 2 Cups of thin Poha
• 3 – 4 table spoon Oil
• 1 tea spoon Mustard Seeds
• 1 tea spoon Cumin Seeds
• 1 tea spoon Turmeric powder
• ½ tea spoon red Chilli powder
• 6 – 8 Curry Leaves
• ½ cup Peanuts
• ¼ cup raisins
• Salt to taste
• 2 table spoon grained Sugar
Recipe:
• Heat Oil in a Pan. Add Mustard Seeds let it pop out, add Cumin Seeds, Curry leaves, Turmeric Powder and sauté for a minute.
• Add peanuts and raisins stir till the peanuts and raisins becomes golden brown.
• Add Salt and Sugar
• Add the Poha, stir this mixture on medium heat for 10 – 15 minutes.
• Mix this well till Poha is coated with all spices.
• Cool this Chivda completely, store in an air tight container.
• At the time of serving we can put some sliced Onions, Coriander Leaves and Lemon Juice on this Chivda.

In today’s life, we come across various tensions.  Many people cant face them or handle them properly.  One of the reason behind it is lacking of notional values in our food.  These can be obtained in various ways by adding them into our meal.  Known best sources are fruits.

A Healthy person must eat fruit row and not in a juice form.  Following are some of the common fruits available in the market like Banana, water melon, Grapes, Pomegranate, apple.
Pomegranate:  Increases haemoglobin useful in anaemic patients.  In pregnancy it helps to reduce vomiting trouble.
Grapes:  are useful in leaver and skill problems.  Grapes are antioxidant.  We should avoid drinking water after eating grapes.  It is reach in copper, iron and manganese.  Grapes get digested in about two hours. These are having sufficient antioxidant.
Banana: It is called as a complete meal.  It increases weight hence good for weak patients and having a body mass index less than 18 to gain weight. The carbohydrate in it is more digestible as compared to other fruits.  It gives energy and nourishes the muscles.  It is helpful in reduction of cholesterol and to keep control on high BP.  Cooking banana is useful in the treatment of intestinal ulcers.
Apple: An apple a day keeps a doctor away.
Water Melon: It is useful in summer fever.

Chatpati Masala Bhendi Recipe



• Preparation Time: 30 Minutes
• Serves: 4 persons

Ingredients:
• 250 grams Ladyfingers (bhindi)
• 2-3 Onions
• ½ tea spoon Turmeric powder
• ½ tea spoon Garam Masala powder
• 1 table spoon Coriander powder
• ½ tea spoon Red chilli powder
• 1 table spoon cumin powder
• 2 table spoon Chat masala
• 1 table spoon Fennel seeds raw crused (saunf)
• Gram flour (besan)
• 1 tea spoon Dry  Mango powder (aamchur) / 1 tea spoon lemon juice
• Salt to taste
• ½ table spoon Oil
• ½ cup Coriander leaves chopped


Recipe to Make Chatpati Masala Bhendi
• Wash the lady fingers, dry with cotton cloth. Slit on one side with knife to fill the masala into this.
• Take a bowl, mix red chilli powder, coriander powder, chaat masala, garam masala, raw crashed fennel siids, rosted cumin, raw mango powder or lemon juice and salt to taste.
• Fill this mixture into the slits of the lady fingers.  Add remaining mixture and put little on oil and mix well. Set aside.
• In a non stick pan put oil add chopped onions, sauté for 2-3 mintues. Add gram flour (besan) mix it will
• Add stuffed lady finguers and mix well. Cover pan with lead, stir occasionally till lady fingers gets crispy.
• Garnish with chopped coriander leaves.
• Serve hot with Roti or Nan

Puran Poli - Holi festival Sweet Dish.



This is maharashtrian sweet dish which is also whole meal item.  This recipe mainly prepared at the time of Holi festive season in India.


Ingredients:
• 500 gram Chana Dal
• 500 gram Sugar or Jaggery
• 250 gram Wheat flour
• 100 gram flour
• 5 table spoon Oil
• 1 Tea spoon grated Nutmeg
• ½ Tea spoon Cardamom powdered
• 2 Table spoon Pure or Home made ghee
• ½ Cup Milk to serve
Recipe to make Puran Poli
• Wash the Chana Dal with ½ cup water.
• Drain our extra water from the dal.
• Add Sugar or Jaggery to this cooked dal.
• Keep this mixture on the low heat, stir till the mixture becomes thick.
• Remove this mixture from the heat set aside for some time.
• Use sieve to pass this mixture before its gets cold.
• Add powdered Nutmeg and Cardamom powder.
• Keep this mixture on low heat if the mixture is still having some water in it.
• Mix in vessel Wheat flour, Flour, oil. Knead this mixture by using little water and make smooth dough.
• Keep this knead dough for an hour.
• Make small size balls from dough and rolled. Put small size chana mixture in the center of the dough, close it the filling completely.
• Roll this ball into chapatti. Fry this on non stick pan with little ghee from both the sides.
• Serve hot with Pure ghee or hot milk.

• Preparation Time: 45 Minutes.
• Serves:  4 persons.
Ingredients:
• 2 Cups Basmati Rice
• 8 Tomatoes Medium Size
• 4 Onions cut into long thin slices
• 1 cup green peas
• 4 green Chillies
• 1 inch Ginger
• 2 tea spoon Mustard Seeds
• 4 – 5 Curry Leaves
• 1 table spoon Red Chilli Powder
• 3 -4 table spoon Oil
• Salt to taste
• ¼ cup Coriander leaves for garnishing
• 2 table spoon Butter or Homemade Ghee

Recipe:
• Cook the rice and make it cool.
• Make a paste of green chillies and Ginger.
• Grind the Tomatoes and make smooth paste.
• Boil the green peas.
• Heat pan, add Oil heat the Oil. Add Mustard Seeds which will splutter, add Curry leaves, Onion slices and Salt to taste. Mix it well for 5 minutes. Stir till onion gets golden brown.
• In this mixture add green Chilli and ginger paste, tomatoes paste, boiled green peas, Chilli Powder, salt. Boil till it turns into thick paste.
• In this paste mix cooked rice.
• Garnish with chopped coriander Leaves. Put Butter or Ghee and serve hot.
