Coconut Rice - One dish meal.



This is konkani recipe rice from India.  One dish meal.
Preparation time: 30 minutes
Serves: 6

Ingredients
·         2 Cups big grain or Basmati rice
·         2 Table spoon Oil
·         1 Onion sliced
·         1 cup Coconut cream
·         4 Cup Water
·         Coriander leaves
·         2 Green Chillies
·         4 Elaichi (Cardamom)
·         Piece of Cinnamon
·         4 Table spoon Home Made Ghee or Butter
·         ½ tea spoon Peppercorns
·         Salt to Taste
·         2 table spoon Grated coconut


Recipe:
1.      Wash Basmati rice and soak in the water for some time.
2.      In pan pour oil, add peppercorns let it crackle.
3.      Add spices into this cardamom and Cinnamon fry little and add sliced Onions, Fry this till golden brown.
4.      Add rice fry for 5 minutes. Add Coconut Milk stir for 2 minutes.
5.      Add 4 cups of warm water, add salt to taste and bring this mixture to boil.
6.      Add 2 table Spoon of Ghee and 1 table spoon of grated Coconut.
7.      Cover pan and cook this rice on low heat for 15 minutes.
8.      Open the pan add the 2 Table spoon Ghee and 1 Table spoon of grated Coconut.
9.      Garnish with green chillies and coriander leaves.
10.  Serve hot with Green Raita or Curd.
