Mashroom masala



·         Preparation Time: 20 Mins.
·         Serves: 3-4 persons

Ingredients:
      2 onion (pyaj) cut
·         1/2 kg mushrooms
·         1 tsp garlic paste
·         Salt to taste
·         1 tomato cut
·         1/2 tsp red chilli  powder
·         3 tbsp Oil
·         1/2 tsp garam masala
·         1 tbsp fresh coriander chooped
·         1/2 tsp turmeric  powder

Recipe:
   ·             Cut mushrooms in slices.
   ·             Heat oil and fry onions until golden brown in colour.
   ·         Add garlic paste and cut tomatoes.
   ·         Put chilli powder, turmeric, garam masala and salt.
   ·         Saute for 3-4 minutes or until it starts leaving oil.
   ·         Add mushrooms and mix well.
   ·         Simmer and stir fry till mushrooms are tender.
   ·         Add very little water.

Garnish:
·         Serve decorated with coriander.



Recipe of Macaroni with Spinach Sauce.


·         Preparation Time: 20 Mins.
·         Serves: 3-4 persons
Ingredients:
·         1 bunch Spinach (blanched, drained and chopped finely)
·         4 cups boiled Macaroni
·         1 table spoon of Oil
·         1 table spoon of Olive Oil
·         5 Garlic cloves
·         4 table spoon grated cheese
·         2 table spoon Butter
·         ½ cup flour
·         1 cup Milk

·         Season or freshly crushed black pepper
·         Salt to taste
Recipe:
·         Take water in a pan, bring to boil.
·         Add some salt in this water, add Macaroni and cook in boiling water.
·         Add a table spoon of Oil cook till it becomes soft.
·         Drain the macaronis completely. Add table spoon of Olive Oil. Mix it well and keep this aside.

·         Put vessel on heat and add Butter. Finely chop Garlic cloves and sauté in butter for minute. Add flour sauté for 4-5 minutes. Reduce the heat.
·         Add warm milk slowly; stir until it forms a creamy consistency.
·         In this creamy mixture add chopped and drained Spinach and mix well.
·         Add 2 table spoon of grated cheese.
·         Add Salt to taste and Pepper and mix well.
·         Turn off heat. Garnish this Macaroni with grated Cheese.

·         Serve Hot.

Kheer Indian Sweet DIsh

Kheer: Indian Sweet DIsh

Ingredients:
1/4th cup long grain rice (washed and drained)
·         4-5 cups milk
·         2-3 cardamom seeds (crushed)
·         2 tbsp almonds (blanched silvered)
·         A pinch of saffron threads, soaked in a little hot milk
·         1 tbsp skinned pistachio nuts (chopped)
·         1 tbsp raisins (optional)
·         2-3 tbsp sugar or as desired



How to make kheer:
·         Put the rice, milk and cardamom in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up.
·         Add almonds, pistachio, saffron and raisins and simmer for 3-4 minutes.
·         Add the sugar and stir until completely dissolved.
·         Remove the rice kheer from heat and serve either warm or chilled.


Aloo Paratha:


Aloo Paratha can be served as snacks or even a one dish meal to get change out of the typical routine.
·         Preparation Time: 20 Mins.
·         Serves: 3-4 persons

Ingredients:
·         2 cup wheat Flour
·         1 cup Water 
·         2-3 Potatoes (boiled and mashed)
·         1/4 tsp Red Chilli Powder
·         1 tsp Chaat Masala
·         1/4 tsp Salt
·         Oil/ghee
Recipe:
·         Mix water and flour and knead it to make a soft dough.
·         Leave the dough for about half an hour.
·         Meanwhile add salt, chili powder, chaat masala to the potatoes and mix thoroughly.
·         Now roll out small balls out of the dough.
·         Smear a little oil in the center and then put some stuffing mixture.
·         Draw the edges towards the center to cover the mixture.
·         Press the resulting dough gently and dust it with flour. Flatten to the size of roti.
·         Place the paratha on a preheated griddle.
·         After some time reverse the side of paratha. Do it when golden brown patches appear on first side.
·         Sprinkle little oil and then flip again.
·         Sprinkle oil drops on other side also. Cook till it is well done.
·         Hot Paratha is ready. Serve with Chutneys or Tomato Ketchup.

Masala Papad

Masala Papad
Indian starter dish which includes some ingredients which helps to apatite before our lunch.

Ingredients:
·         1 Papad
·         1 tbsp Onion (finely chopped)
·         Zero Number Shav
·         1 tbsp Tomato (finely chopped)
·         ½ tbsp Coriander Leaves (finely chopped)
·         ¼ tsp Lemon Juice or Amchur Powder
·         1/4 tsp Chili Powder
·         Salt to taste
Recipe for Masala Papad:
·         Roast the papad on high flame carefully and lay it on a palate.
·         Now mix all the ingredients in a bowl, except papad.
·         Spread the mixture on the papad.
·         Serve before or with lunch.

Aloo Bonda

Aloo Bonda
Preparation time: 30 Minutes
Serves: 2


Ingredients:

2 or 3 medium potatoes (boiled and peeled and loosely mashed)
1/2 tsp. of cumin and mustard seeds each
fresh green chili chopped finely - to taste
1/2 tsp. each ginger & garlic(finely chopped)
3/4th cup Chopped Onions 
1/4 tsp. turmeric powder
1/2 cup. Cilantro leaves (chopped)
Salt to taste
2 tbsp. Lemon juice
1 1/2 cups
besan -chickpea flour available in our store
1 tsp. Cayenne Pepper
1/4 tsp. baking Soda
Oil for deep frying - use a wok for frying

Method:

1.  Heat about two tablespoons of oil. Add mustard seeds and when the seeds start to crackle, add the cumin seeds, green chili, salt, ginger and garlic. Fry for a few seconds and add onions and turmeric powder. When the onions start to turn brown add cilantro and lemon juice and the potatoes. Mix well and turn off the heat. Let this mixture cool. Shape into small balls.

2. Make a thick batter with Besan/Chickpea flour, salt, red chili powder, baking soda and water.

3. Heat the oil for 10 to 15 minutes on medium heat. When the oil is hot, Dip the potato balls into the batter and carefully drop in the oil. Turn it every four minutes and remove from oil when it turns golden brown.

4. Serve with tamarind or green chutney.

Kathi roll recipe


Preparation Time: 20 minutes   
Cooking  time: 25 minutess   
Serves; 3-4 persons Makes: 9  - 10

Ingredients
·         1 cup Atta (wheat flour)          
·         1 table spoon Dhaniya powder            
·         1 table spoon Red chilli powder           
·         1 table spoon Chaat masala  
·         1 tsp Jeera        
·         3 medium size Potatos
·         ½ cup Cheese, grated
·         1 – 2 Onion      
·         4 table spoon Tomato ketchup          
·         2 table spoon  Green chutney
·         Coriander leaves (optional)   
·         Oil/ Ghee       
·         Salt  to taste
Recipe to make Kathi Roll:
·         Wash and  Boil or pressure cook potatoes . Heat pan with oil and splutter jeera. Add the cooked, peeled and roughly cubed potatoes. Add coriander seeds powder (dhaniya powder),chat masala, red chilli powder and salt. Mix well and fry for 2 minutes.
·             Prepare the dough as we do for roti and keep aside for 20 mins. Then knead again, and make  9 or 10 equal sized balls, roll it out to roti, slightly thick. Toast both sides carefully in tawa without browning it too much. Prepare all the roti and keep aside.
·             Chop onion. Take one roti, spread a tsp of green chutney first. Let it be slightly towards the bottom of the roti.  Then the prepared aloo curry, cheese, ketchup on top of it.
·             Then lastly chopped onion. If you dont have green chutney, you can add some chopped coriander leaves over the onions. You can just roll and pack with foil like this as such.
·             You can sprinkle a little bit cheese towards the end so that it can hold the roll. Toast with ghee it if needed.
